Santa Fe Chicken

It is the marinade in this dish that gives the chicken such a smooth flavor. It is recommended that the chicken meat can soak in the marinade for at least 1-2 hours. If you plan ahead a better results is to soak the meat in the marinade for up to two days. Serve this dish with a side of Spanish Rice and Jicama and Carrot Salad. Bake or grill the chicken breasts.

Marinade:
Juice from 3 limes
1/4 cup soy sauce
11/2 teaspoons olive oil
11/2 teaspoons chili powder
11/2 teaspoons cumin seed
11/2 teaspoons ground coriander
6 cloves garlic, minced
11/2 teaspoons honey
2 whole breasts boneless, skinless chicken
1/2 cup dry white wine
3 tablespoons chopped cilandro leaves

Garnish
Creme fraise or sour cream
1 lime, sliced into thin slices
6 scallion firecrackers
