The lightest tempura batter ever

75 grams plain flour
12 grams baking powder
a little black pepper
decent pinch of salt
ice cold water

Mix all dry ingredient together. Whisk in cold water until a nice batter texture is achieved.
Chill in fridge for 20 mins.

Heat deep oil to a reasonably hot temperature.

Flour & dip in batter anything you like & fry immediately. Plaice, oysters, thin cod fillets are wicked. Oil should be quite hot as the batter cooks very quickly and come up very light & crisp.
